A quick, 10 minute soup, full of nutrients and taste. We love broccoli!
Ingredients:
3 heads broccoli – chopped into 2cm pieces
3 cups water
1/4 tsp salt
10 basil leaves
2 rashes bacon
1/4 cup feta cheese
Method:
Simmer broccoli in water for 4.5 mins along with salt.
Then pour into a blender with basil and blend till smooth.
Meanwhile, chop bacon fine and fry.
Pour soup into bowls and garnish with bacon and feta.
