Lemony Snicker Ball

This sweet lemony ball is our newest creation.  The more lemon I add the more I love this protein powerhouse.  The lemon adds a nice hit of vitamin C, our immune building vitamin to this snack.  Double the ingredients and store in an airtight container for sweet treats all week long.

Ingredients:

1/4 cup Mayver's Almond, Brazil Nuts & Cashew Spread
1 cup desiccated coconut (preservative free)
1/2 cup of lemon juice and zest
1/2 tsp natural vanilla extract
2 tbsp maple syrup Dry coconut (extra, for rolling in)

Method:


  1. Place all ingredients except lemon juice into a food processor. Don’t over mix.
  2. Add to a bowl and slowly pour in lemon juice, mix as you go along, you want the mixture to start coming together.
  3. Roll into balls then coat with coconut.
  4. Pop in fridge to set for 2-3 hrs.
