Strawberries & Cream

These pretty parfaits can be made up to 2 hours in advance of serving, and you can use any berry without sacrificing even a little bit of the nutrition. Makes 4 servings. Original recipe by JJVirgin, altered by A Healthy View.
Ingredients:
1 cup plain cultured coconut milk
1/2 tsp stevia
1/4 tsp almond extract
1 punnet of strawberries, hulled and quartered
2 tsp white balsamic vinegar
2 tsp cacao nibs
Method:
- Combine coconut milk, 1/4 tsp stevia and almond extract in a small bowl; beat well with a whisk.
- Combine strawberries, vinegar and remaining stevia in a separate bowl.
- Divide strawberries among the 4 parfait glasses, and spoon coconut milk mixture over the top.
- Sprinkle with the cacao nibs and serve.
