Banana Loaf
Ingredients:
1 cup (3) mashed over ripe bananas
¼ cup maple syrup
pinch of salt
2 tsp cinnamon
1 tsp vanilla bean
¼ cup coconut oil
¼ cup almond milk
2 eggs OR 3 tbsp chia seed w/ 1 tbsp water
1 cup almond meal
1 cup chickpea flour
1 tsp baking soda
2 tsp baking powder
Method:
Preheat oven at 180C
Combine maple syrup with coconut oil, whisk in egg, milk, vanilla and cinnamon
Sift in the meal, flour, salt, baking soda and powder. Fold through till combined.
Line loaf tray with baking paper and sides with coconut oil
Bake at 180C for 55-60 min until clean skewer comes out and golden brown.
