A study in Food Science & Nutrition found that adding 84g, or half a cup, of a combination of portabella, cremini, and white mushrooms or oyster mushrooms to a daily meal increased dietary fifibrepotassium, selenium, copper, phosphorus, riboflavin, niacin, and choline -- without affecting calories, carbohydrate, sodium or fat. The findings also revealed that the consumption of mushrooms exposed to ultraviolet light provides a daily 5mcg of vitamin D.
