One Pot Wondrous Chilli
We say bring on cooler weather so we can indulge in this winter warmer properly! One bowl and a whole love of yumminess!
INGREDIENTS
- 6 Chicken Breast diced
- ½ cauliflower head
- Garlic
- 1 onion diced
- 2 capsicum chopped
- 1 cup of corn frozen or fresh
- ½ tsp veg stock mixed with ½ cup water
- 1 tsp smoked paprika
- 1 tsp chilli powder
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp oregano
- 4-5 medium tomatoes diced
- Garnish:
- 1 avocado
- Lime
- Bunch or coriander
METHOD
- Place everything into a slow cooker and cook for 8 hours on low, or until the chicken is falling apart and is nice and thick.
- Garnish with avocado coriander and lime.
- Add black or kidney beans if you have kids eating this meal but take out your serving before this if you want a bit of a lower carb meal.
- ENJOY!
