Lemon Bites

Ingredients:

½ cup raw cashews
½ cup almond meal
¼ cup shredded coconut + extra to roll in
3 tbs of maple syrup
3 tbs lemon juice
2 tbs lemon rind
1 tbs coconut oil
1 tps vanilla extract

Method:

Add the cashews, coconut, rind and almond meal to the food processor and combine till a fine meal

Add the lemon juice, syrup, oil and vanilla extract and pulse until a ball forms.

Roll into 1 tbs balls and either refrigerate for 15 minutes until set and enjoy raw or flatten and bake at 180 for 10 minutes or until golden.
