• ½ cup raw cashews
• ½ cup almond meal
• ¼ cup shredded coconut + extra to roll in
• 3 tbs of maple syrup
• 3 tbs lemon juice
• 2 tbs lemon rind
• 1 tbs coconut oil
• 1 tps vanilla extract
- Add the cashews, coconut, rind and almond meal to the food processor and combine till a fine meal
- Add the lemon juice, syrup, oil and vanilla extract and pulse until a ball forms.
- Roll into 1 tbs balls and either refrigerate for 15 minutes until set and enjoy raw or flatten and bake at 180 for 10 minutes or until golden.
