This delicious Tuscan Chicken In Spinach is the perfect dinner if you are following my Healthy Hormone Diet book.

INGREDIENTS:
4 Skinless, bone-in-chicken thighs
Salt and black pepper, to taste
1T ghee or coconut oil, divided
1/4 cup chopped yellow onion
1 garlic clove, minced
1 vine-ripened tomato, quartered
1/4 cup black olives, pitted and sliced
1/4 cup chicken bone broth
1/4 cup full-fat-coconut cream
1T Italian herbs seasoning
1 cup fresh spinach leaves
2 T chopped fresh parsley

METHODS:
Season the chicken thighs with salt and black peper.

In a large skillet, heat 1/2 tbsp ghee over medium heat. Add the chickent and cook for 3 to 4 minutes on each side. Remove chicken from the pan and set aside on a warm plate.

Add the remaining 1/2 tbp ghee to the skillet and saute the onion and garlic until fragrant. Add the tomato and olives, and stir-fry for 20 seconds. Reduce the heat add the chicken broth, coconut cream, and Italian herbs.

Add the chicken back to the skillet. Cover and cook on low heat for 15 minutes, or until or until a meat thermometer inserted in the thickest part of a chicken thigh reads 165’F.

Add the spinach, cover, and simmer for 1 minutes.

Sprinkle with the parsley and serve immediately.
