Vanilla and Hemp Chia Parfait

Vanilla and Hemp Chia Parfait

Serves 2
INGREDIENTS
3 tbsp organic chia seeds
1 cup organic coconut milk
1/4 tbsp organic hemp protein
1 tsp vanilla extract
2 tbsp organic maple syrup
1 pinch organic cinnamon powder
1 handful organic shredded coconut
1 cup blueberries + a handful to serve
1/2 lemon
1/2 cup coconut or greek yogurt
2 tbsp organic hulled hemp seeds
METHOD
In a bowl mix the hemp protein, milk, cinnamon, chia, 1/2 the maple and vanilla. Stir until smooth then place the bowl in the fridge for at least 2 hours, stirring every so often until the chia is soaked, thickened and has expanded. Leave overnight if desired.
Meanwhile, squeeze the lemon into a saucepan and add the berries along with the remaining maple syrup. Cook on a low heat until soft and leave to cool.
Spoon the chia 1/3 of the way into a glass or jar. Add a layer of yogurt and blueberries then repeat.
Top with the remaining berries, seeds and coconut.
